Am going to cook something French this weekend. Thinking Sea bass, Provencal style, will vary from the selected recipe as Fennel may be to strong and dominate the Fish. So may opt for Chives instead. Of course will slip Garlic in there somehow, as I love it. Accompanied with at least two different varieties of button mushroom, mange tout and sugar snap peas perhaps, and those dinky little potatoes as an accompaniment. The sauce will be critical, right balance of cream, butter, vermouth recommended, but will opt for a white wine, and simmer slowly to a Holandase consistency. Never follow a recipe literally, spin your own variation, think I will wrap the bass in Lettuce leaves, sort of 'Esscofier' style. Never really do desserts as tend to enjoy a more satisfying main course, entrees a different matter, may experiment with that, perhaps simple Caviar, or even Prawns or Mussels.
